Mexican Staycation

1 thick slice papaya, seeded

2 tsp simple syrup
juice of half a lime (about a tbsp)
2 oz dark rum
4 drops The Bitter End Mole Bitters

muddle papaya with simple syrup and lime juice in a shaker. Add rum, bitters, and ice. Shake and double-strain into a chilled cocktail glass. garnish with a lime wheel.
